  • 1 can 15 oz diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup crushed tortilla chips
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions:

Before you start cooking, heat the oven to 375F 190C

Toast the ground beef in a big pan over medium-low heat

Get rid of any extra fat

Put chopped red bell pepper and onions in the pan and cook them until they get soft

Add the corn, black beans, and diced tomatoes, and mix them in

After a few minutes of cooking, make sure that everything is well mixed and hot

Put half of the crushed tortilla chips in a 9x13-inch baking dish

Put the beef mix and half of the shredded cheddar cheese on top

Add the rest of the tortilla chips and cheese and repeat the layering process

Put it in an oven that is already hot and bake for 20 to 25 minutes, or until the cheese is bubbly and golden brown

Take it out of the oven and let it cool down a bit before you serve it

Put the Mexican Casserole Tacos on a plate and add sour cream, chopped cilantro, and extra tortilla chips for dipping

Have fun with your tasty Mexican casserole tacos
