Eggs, tomatoes, and green peppers are used to make the tasty Turkish dish menemen. Its an easy and quick way to make a tasty breakfast or brunch dish.
Ingredients:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 2 green peppers, diced
- 4 eggs
- Salt and pepper to taste
- 1/2 teaspoon red pepper flakes optional
- Fresh parsley, chopped for garnish
Instructions:
Heat olive oil in a skillet over medium heat
Add finely chopped onion and minced garlic, saut until translucent
Add diced tomatoes and green peppers, cook until they soften
Create small wells in the mixture and crack the eggs into them
Season with salt, pepper, and red pepper flakes if desired
Cover the skillet and cook until the egg whites are set, but the yolks are still runny
Garnish with chopped fresh parsley
Serve hot with crusty bread
