Ingredients:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1/2 cup hot water
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 cup unsalted butter
- 1/4 cup corn syrup
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions:
Warm up your oven to 350F 175C and put cupcake liners in a muffin tin
Put the cocoa powder, granulated sugar, baking powder, baking soda, and salt in a bowl and mix them together
Break up the butter and add it to the dry ingredients along with the eggs, vanilla extract, and buttermilk
Mix everything together well
Add the hot water slowly and stir the batter until it is smooth
Add the semisweet chocolate chips and mix them in
The batter should be about two thirds of the way up each cupcake liner
After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
Be sure to make the chocolate truffle ganache while the cupcakes are baking
Put the heavy cream in a saucepan and heat it until it starts to simmer
Take it off the heat and add the plain cocoa powder, corn syrup, salt, vanilla extract, and powdered sugar
Mix everything together until its smooth
Allow the ganache to cool a little before using it
Allow the cupcakes to cool in the muffin tin for a few minutes after baking
Then, move them to a wire rack to finish cooling
After the cupcakes have cooled completely, put a lot of the chocolate truffle ganache on top of each one and let it drip down the sides
You can decorate the cupcakes with extra cocoa powder, chocolate chips, or sprinkles if you want to
