Mexican Stuffed Peppers

These Mexican Stuffed Peppers are a flavorful and satisfying meal, combining tender bell peppers filled with a savory mixture of ground beef, rice, beans, corn, and spices, topped with melted cheese for extra indulgence.

Ingredients:

  • 4 large bell peppers, halved and seeded
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro leaves, for garnish

Instructions:

Warm the oven up to 190C 375F

With the heat on medium, cook the ground beef, onion, and garlic in a skillet until the beef is browned and the onion is soft

Get rid of extra fat

Black beans, corn, diced tomatoes, chili powder, cumin, paprika, salt, and pepper should all be added now

Allow the flavors to blend for five more minutes

Put the cut side of the bell pepper halves up in a baking dish

Fill each pepper half with an equal amount of beef mixture

Place foil over the baking dish and bake for 25 to 30 minutes, or until the peppers are soft

Take off the foil and top the stuffed peppers with shredded cheese

Put them back in the oven and cook for another 5 minutes, or until the cheese is melted and bubbly

Before serving, sprinkle with fresh cilantro leaves
