Creamy Vegan Pasta

Ingredients:

  • 250g pasta
  • 1 cup cashews, soaked overnight
  • 2 cups unsweetened almond milk
  • 3 cloves garlic
  • 2 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

Cook pasta according to package instructions until al dente

In a blender, combine soaked cashews, almond milk, garlic, nutritional yeast, lemon juice, salt, and pepper

Blend until smooth and creamy
