Veganer rigatoni is a tasty and filling pasta dish made with hearty rigatoni noodles and a tomato-based sauce that has garlic, onions, mushrooms, and other tasty things added to it. This recipe is great for a cozy dinner during the week or a casual get-together with friends.
Ingredients:
- 300g rigatoni pasta
- 1 can 400g crushed tomatoes
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup chopped mushrooms
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
Follow the directions on the package to cook rigatoni until it is al dente
Remove the water and set it aside
Warm up the olive oil in a big pan over medium-low heat
Cut up the onion and garlic and add them
Saut until the meat is soft
Put chopped mushrooms in the pan and cook them until they start to brown and give off their water
Add the tomato paste and season with salt, pepper, dried oregano, and dried basil
Use a stir to mix
Let the sauce cook on low heat for 10 minutes so that the flavors can blend
Put the cooked rigatoni pasta into the pan with the sauce
Toss the pasta around until its covered all over
Add fresh basil leaves on top and serve hot
