A delicious and flavorful vegan Thai-inspired fried rice dish packed with nutritious broccoli and mushrooms.
Ingredients:
- 2 cups cooked jasmine rice
- 1 cup broccoli florets
- 1 cup sliced mushrooms
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sriracha sauce optional
- 1 tablespoon lime juice
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped green onions
- 1 tablespoon chopped peanuts optional
Instructions:
Put sesame oil in a large pan and heat it over medium-low heat
Add the minced garlic and diced onion and saut until the garlic smells good
Put in broccoli florets and sliced mushrooms, and cook them until theyre soft
Add the cooked jasmine rice to the pan and mix it around well
Add the lime juice, soy sauce, and sriracha sauce if using to the rice mixture and mix them together
Add three to four more minutes and cook until everything is hot
Sprinkle chopped peanuts, cilantro, and green onions on top after taking it off the heat
Enjoy while hot
