Ingredients:
- 1 cup teff grains
- 2 cups water
- 1/4 teaspoon salt
- 1/2 cup chopped dates
- 1/4 cup chopped pecans
- 2 tablespoons honey
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
- Fresh fruit for garnish optional
Instructions:
Rinse the teff grains thoroughly under cold water
In a medium saucepan, bring 2 cups of water to a boil
Add the rinsed teff grains and a pinch of salt to the boiling water
Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the teff is tender and the water is absorbed
Stir occasionally to prevent sticking
Remove the saucepan from heat and let it sit, covered, for 5 minutes to steam
While the teff is resting, toast the chopped pecans in a dry skillet over medium heat for a few minutes until fragrant
Set aside
Fluff the cooked teff with a fork and stir in the chopped dates, toasted pecans, honey, ground cinnamon, and vanilla extract
Mix well to combine
Serve the teff porridge hot, garnished with fresh fruit if desired
