Subsalted Chocolate Brownie Cookies

Ingredients:

  • 1 cup semisweet chocolate chips
  • 1/4 cup unsalted butter
  • 1/3 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans optional
  • Flaky sea salt, for topping

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a microwave-safe bowl, melt the chocolate chips and butter in 20-second intervals, stirring until smooth

In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt

In a large bowl, beat the sugar, eggs, and vanilla extract until well combined

Gradually add the melted chocolate mixture to the sugar mixture, mixing until smooth

Fold in the dry ingredients and chopped nuts if using until just combined

Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them apart

Gently press down on each cookie dough mound to slightly flatten

Sprinkle a pinch of flaky sea salt on top of each cookie

Bake in the preheated oven for about 10-12 minutes, or until the edges are set but the centers are still slightly soft

Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely
