Peppered Brussels Sprouts with Toasted Coconut

The earthy Brussels sprouts, fragrant coconut, and sour black pepper in these Peppered Brussels Sprouts with Toasted Coconut go very well together. They taste better and are naturally sweeter after being roasted. Its a simple, healthy vegan side dish that goes well with any meal.

Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp coconut oil
  • 2 tbsp shredded coconut
  • 1 tbsp black pepper, freshly ground
  • Salt to taste

Instructions:

Preheat the oven to 400F 200C

In a large bowl, toss Brussels sprouts with coconut oil, shredded coconut, black pepper, and salt until evenly coated

Spread the Brussels sprouts on a baking sheet lined with parchment paper in a single layer

Roast in the preheated oven for 20-25 minutes, or until Brussels sprouts are tender and slightly browned, stirring halfway through

Once done, remove from the oven and serve immediately
