Ingredients:
- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp coconut oil
- 2 tbsp shredded coconut
- 1 tbsp black pepper, freshly ground
- Salt to taste
Instructions:
Preheat the oven to 400F 200C
In a large bowl, toss Brussels sprouts with coconut oil, shredded coconut, black pepper, and salt until evenly coated
Spread the Brussels sprouts on a baking sheet lined with parchment paper in a single layer
Roast in the preheated oven for 20-25 minutes, or until Brussels sprouts are tender and slightly browned, stirring halfway through
Once done, remove from the oven and serve immediately
