This Keto Cauliflower Fried Rice is a low-carb alternative to traditional fried rice, perfect for those following both Keto and Paleo diets. Cauliflower serves as a versatile substitute for rice, while coconut oil and soy sauce bring in rich flavors.
Ingredients:
- 1 head cauliflower, grated
- 2 tablespoons coconut oil
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 2 cloves garlic, minced
- 2 eggs, beaten
- 1/4 cup soy sauce or tamari
- 1 cup cooked chicken, diced optional
- Salt and pepper to taste
- Sesame seeds for garnish optional
Instructions:
Heat coconut oil in a large skillet over medium heat
Add diced onion, bell pepper, and minced garlic
Saut until vegetables are tender
Push vegetables to one side of the skillet and pour beaten eggs into the other side
Scramble eggs until cooked through
Add grated cauliflower to the skillet and stir to combine with the vegetables and eggs
Pour soy sauce or tamari over the cauliflower mixture and stir well
If using chicken, add diced chicken to the skillet and cook until heated through
